Comfort food does not have to be heavy.

That is something Mediterranean cooking understands very well.

Some of the most satisfying dishes are built from simple ingredients: beans, vegetables, herbs, grains, fish, tomatoes, garlic, bread and extra virgin olive oil. They are warming without being excessive. Generous without feeling dull.

October is the perfect time to cook Mediterranean comfort food this way.

The colder weather asks for depth, but the food still needs lift. This is where olive oil becomes so important. It can bring richness and softness, but also freshness, bitterness and peppery structure.

Used well, it keeps comfort food alive.

Start with olive oil as the base

Many autumn dishes begin with the same quiet step.

Olive oil in a pan. Onion, garlic, celery, carrots or herbs. Gentle heat. Time.

This base matters because it sets the tone for the dish. Extra virgin olive oil carries the aromatics and gives the food a rounded foundation.

For everyday cooking, I often prefer a medium or softer oil here. Something fresh and good quality, but not necessarily the most intense bottle in the collection.

Save the most expressive oils for finishing, where their aroma can really show.

Finish with your best oil

This is one of the easiest ways to improve autumn cooking.

Use olive oil at the beginning, then again at the end.

A final drizzle of high-quality extra virgin olive oil over soup, beans, roasted vegetables or grains can completely change the dish. It adds gloss, aroma and freshness. It can bring a peppery lift to something rich or a softer roundness to something sharp.

This is especially useful with comfort food, which can sometimes become too heavy.

The finishing oil brings it back into balance.

Lentil soup with peppery olive oil

Lentil soup is one of the great autumn dishes.

It is simple, nourishing and deeply suited to olive oil. Start with onion, carrot, celery, garlic and herbs. Add lentils, stock and perhaps tomatoes or greens. Let it cook until the lentils are soft and the soup feels complete.

Then finish each bowl with a bold, peppery EVOO. Early-harvest oils are ideal here.

That final pour matters.

The bitterness and pungency cut through the earthiness of the lentils and make the soup feel brighter. Add lemon or vinegar if you want more lift.

Beans on toast, properly done

Beans on toast can be far more than a quick meal.

Warm butter beans or cannellini beans with garlic, rosemary, lemon and olive oil. Spoon them over toasted sourdough. Finish with sea salt, black pepper and another drizzle of oil.

A medium to bold oil works well here because beans can take flavour.

The result is comforting, but still elegant. Simple food, made better through better ingredients.

Roasted squash with yoghurt and herbs

Roasted squash is naturally sweet, which makes olive oil pairing important.

Use olive oil before roasting to help the squash caramelise. Then, once cooked, finish it with a more structured EVOO, herbs and a spoonful of yoghurt or labneh.

The contrast is what makes the dish work.

Sweet squash. Creamy yoghurt. Green herbs. Peppery oil.

It feels generous without being heavy.

Tomato and bread soup

Tomato and bread soup is a beautiful example of Mediterranean comfort food.

It uses simple ingredients, but the result is deeply satisfying. Tomatoes, garlic, stale bread, olive oil and basil can become something far greater than the sum of their parts.

Here, olive oil does two jobs.

It gives richness as the soup cooks, then freshness when added at the end. A green, herbaceous oil can be especially good because it brings the tomato back to life.

This is the kind of dish that reminds you why olive oil has always belonged at the centre of the table.

Warm grains with vegetables

Grains such as farro, barley and rice work beautifully with olive oil.

Combine them with roasted vegetables, herbs, greens, beans or cheese. Dress while warm so the oil becomes part of the dish rather than sitting on the surface.

For a lighter version, use lemon and a medium oil. For something deeper, use roasted mushrooms, squash or onions with a bolder oil.

Warm grain dishes are ideal for October because they sit between salad and stew.

They feel substantial, but not slow.

Do not forget bread

Bread is essential to this kind of cooking.

Not as filler, but as part of the meal. Toasted sourdough, focaccia, grilled ciabatta or rustic bread all work beautifully with soups, beans, roasted vegetables and olive oil.

Rub with garlic. Add sea salt. Pour generously.

Good bread and good olive oil can make even the simplest autumn meal feel complete.

My thoughts

Comfort food should not leave you feeling weighed down.

At its best, it should feel warm, generous and balanced. Extra virgin olive oil helps make that possible.

It gives richness, but also freshness. It softens, but also structures. It brings flavour, but never needs to dominate when used well.

That is the Mediterranean lesson I return to again and again.

Simple food. Good oil. A little patience.

Often, that is enough.
