The aroma comes through as a clean, medium-intensity fruitiness with a clear grassy note that you catch right away. On the palate, the spiciness and bitterness show up together—balanced, intentional, and easy to appreciate.
I’ve found it pairs especially well with typical Trentino dishes: carne salada, beef tagliatelle, and carpaccios. It also stands up beautifully to cured meats, mature cheeses, and simple bruschettas where the oil really gets to shine on its own.”
