Nick's experience

“When you taste this grand cru, it comes across as full and balanced, with clear notes of lettuce and thistle, plus subtle hints of black pepper, cinnamon, and almond. The bitterness is firm, and the spiciness is noticeable without being overwhelming.
It works well with straightforward, flavourful dishes: octopus appetizers, Chianina beef carpaccio with porcini, spinach salads, grilled radicchio, bean soups, pasta with ragù, blue fish au gratin, stewed meats, and aged hard cheeses.
It’s great as a raw finishing oil on both hot and cold dishes with a solid texture, and it also holds up well for medium-long cooking at high temperatures.”
